hey i was just wondering how come there is no post of an apple salade? because i once ate in Iceland for Christmas and they served un a cold apple salade with some withe dressing..I don't really know what it was but it tasted great :D
If you mean the pink salad that is often served with roasts and hangikjöt, there are two recipes:
http://icecook.blogspot.com/2009/08/red-beet-salad-raurofusalat.html
http://icecook.blogspot.com/2010/02/pickled-beetroot-and-beetroot-salad.html
I posted one as "Red beet salad" and the other as "Beetroot salad", but I have added the word "apple" to the titles to make it easier to find. If this isn't the salad you are looking for, just give me a description and I'll see if I can find it for you.
